2007 "Pico Creek" Merlot
Tasting Notes
Our 2007 “Pico Creek” exhibits classic Merlot features. Dark garnet in color; the stage is set with aromas of dark black cherry and vanilla. Underlying subtle aromas of black pepper, clove, and cinnamon dance in the glass. The attack consists of bright strawberry and cherry flavors balanced with racing acidity and ripe tannin that taunts the palate. “Pico Creek’s” earthy finish has a showcase of raspberry and pumpkin spice in the backdrop.
Big fruit, tannin, and great acid calls for the 2007 “Pico Creek” to be paired with Hearst Ranch Flank Steak or Hearst Ranch Filet Mignon grilled over an open fire. This Merlot also tempts and pleases the taste buds when paired with sharp cheeses.
